Cedric won't. He drafts the reply and shows it to you with the address it goes from. It goes out when you say yes, and you can change the draft first in the same reply.
Yes. Connect sales@ as its own Gmail account. Cedric names it from the address, so it becomes "sales", and you can rename it. Say "reply from sales" and the draft goes out from sales@, never from your own address.
